My system is not listed for the version of GCC that I builted

This is the one that was already on your system.  What did you specify
with the --prefix option to configure?  By default it's /usr/local.

Look at the value of your PATH variable (echo $PATH); you'll want the
GCC install directory to come before /usr/bin.  You can also invoke your
new compiler directly by specifying the complete pathname, e.g.
/usr/local/bin/gcc.
