How to change which assembler GCC uses

Some of this you can do by changing the "specs" file. If the syntax
is sufficiently different, an easier approach to this may be to provide 
a wrapper program that converts the GNU syntax of command line options to
the syntax needed for the other assembler/linker and then calls it.

This will also allow for easier porting of build scripts etc.
