Debugging & Profiling in gcc/g++ , HOW?

Before coming to LINUX/gcc, I was in the MFC VISUAL C++ environment.
How do I debug, look at variables during progam execution? are there any tools, gui or text? 
I'd like to write variable values as they change during program execution, what's the best way to do this?
