The code is wrong still you need to mark out as clobber early or in/out constraint.
This code produces the expected results:

        unsigned long long int a,b;
        asm ("\n"
        ".intel_syntax noprefix\n"
        "       pxor %[out], %[out]\n"
        "       paddb %[out], %[in]\n"
        : [out] "+y" (a)
        : [in] "y" (b)
        );
}
