GC bug

There turn out to be a lot of places we create SYMBOL_REFs with
non-GCable strings.  Tsk, tsk.

I'm in the process of fixing this problem in a nice clean way; patch
to follow soon.  I suspect that people on platforms that haven't been
used much with the mmap GC yet will run into random crashes during GC
until I check in the patch later today.
