I think it's a difference between "does what you mean" and "happens to
do what you want on this system".

|| is the right way to say "if this command fails, we still want a
success status".

Using | has all sorts of contraindications, like "you lose stdout",
"you can't redirect elsewhere", and "pipeline dies too soon".
