Hmm. Not sure if this is exactly germane, but 
	http://gcc.gnu.org/install/finalinstall.html
specifies exactly this technique (overriding LANGUAGES) for installing
cross compilers.

I know that I use it whenever the build for some particular piece of
the compiler seems to be failing... (as in, it's faster than having to
reconfigure everything...)
